Almost all planets in the universe with life only contain microorganisms, no doubt.

Most true extremophiles are bacteria. Even on earth there are environments where pretty much only single-celled organisms can survive. On planets where our sort of large lush habitable zone is not the norm, multi-celled organisms are likely to have a tougher go of it.

Plus, multicellular life on earth is largely made possible by mitochondria, a happy accident so rare that it only happened once in 4 billion years.
