As a Middle Eastern, it's quite complicated. But it is depending very very very much.

People from the gulf pay huge attention to formal greetings. Saudi men would give each other three "cheek to cheek" kiss, if a younger person met a very old person, the young would kiss the old on the forehead.This goes for parents especially, and all Arabs do it by nature.

But away from old-fashioned customs, it's mostly a handshake, some don't even handshake.
With women it very much depends on the country, some countries prohibit any kind of physical contact between genders, others allow the handshake, but never ever a kiss between men and women FOR ALL THE MUSLIM WORLD.

Mostly i just say “hey”. Very rarely I will hug a friend as a greeting, but never kiss. Handshakes are typically reserved for people I’m meeting for the first time.

I greet friends and family I haven't seen in a while with the usual 2 kisses on the cheek, or sometimes a hug. Handshakes only when I'm being a cheeky bastard with my friends or, more unironically, when I meet someone for the first time.

So with these exceptions in mind, I mostly greet people with "Ciao" (close friends and family), "Uè" (very close friends, it's very informal, as it is considered "dialect") or "Buongiorno/Buonasera" if I need to be more formal (e.g. with my professors)

I never hug anyone, I find it a really weird action.

I sometimes shake hands, where I work a lot of the Muslims come in and shake hands.

If I like people I'll greet people with a slow genuinely concerned how are you? Or, are you alright?

A lot of people I'm on a playful level with, I'll do whatever I feel like. Stare hard at them like I want to fuck or fight them. Dish out a few insults. Ask them how they are and beyond that everything about how their day has gone, what they've eaten, what they've done and so on.

People I don't like or I feel neutral to I'll just ask a very quick, you alright? Then move onto talking to someone else as quick as possible.
