That would be a good variation to the Scotch Egg.
I regularly wrap chicken thigh with bacon, like mini roasts. I managed to get supper prepared with no more explosions or other catastrophes. And the bacon was wonderful.
Accomplishment today - managed not to die or be maimed while preparing a meal. Little victories. ![]()
One of my sons showed me a video a few years ago where a guy wove bacon into this massive piece of glorious meat and fat and then roasted it. The thing weighed several pounds as I recall. :drool:
