I think these 'devil buy's your soul' stories are mostly a modern invention. So it doesn't surprise me that they don't make theological sense.

But even then, that's a good 1000 year gap between these stories and the new testament. I doubt the writers of middle age folk lore were going for biblical consistency. They have been told, collected and written down at a later stage. They're rather frequent in European folklore. It obviously made for good horror stories on these long winter evenings.
