I treat the OT and NT like I do the Constitution....if there is something from the NT that amends the OT, I will go with the ammended version just like I have the right not to self incriminate. That goes both ways. In the OT, I could divorce and remarry as I saw fit....in the NT, I would generally not be able to remarry after getting divorced.

The dietary restrictions were removed (but as earlier stated, consuming blood is still banned) well as the requirement for circumcision (but that caveat may only apply to Gentiles). Seems like it's still there in Leviticus, just that it was superseded.
