Actually the bible rests as work of the Holy Spirit, meaning if the Bible is the only set of instructions we have to find and worship the God the bible describes then it is the responsibility of said God to provide an accurate accounting of who He is, and what He wants. Otherwise He must change the content, Or He must simply forgive those who worship and believe what his Only book says.
That may sound odd (change the content) but it has happened several times in the History of the church. An example would be when we moved away from the latin vulgate, and complied a translation based off the available greek. One of the original people who push the move back to the greek could read both, said: "either the original greek in which the original vulgate was translated was completely wrong, or none who follow the vulgate are truly Christian." again, Only Christ decides who is and is not Christian. The Point being, Traditional belief would have us going to a latain printed bible that does not represent the original greek structure. So God changed it. Then from the original tynsdale bible we got more changes via older more accurate codecees in the King James version, and again recently with discoveries like the dead sea scrolls and others.
When you look at the history of the bible you see a book that has defied tradition and traditional beliefs in an effort to maintain the closest account that we can compile. So your right while in the 3ish century men did come together to canonize scripture, God has ensured and protected the integrity of His word. Because if this was otherwise simply all been left to tradition, the bible nor the church would look anything like it does today.

Because I find the entire concept of vicarious blood sacrifice atonement to be morally abhorrent, the concept of holding flawed creatures permanently accountable for social misbehaviors and thought crimes to be morally abhorrent, and the concept of calling something "free" when it comes with the strings of subjugation and obedience perhaps the most morally abhorrent of all... and that's without even going into the history of justifying genocide, slavery, rape, misogyny, religious intolerance, and suppression of free speech which has been attributed by your own scriptures to your deity. I want a refund. I would burn happily rather than serve the monster you profess to love.
