I went back to only butter for years, but recently switched again to vegan/olive oil margarine. It was just something I thought I'd try, but the family really likes it. Tastes great, not full of too much garbage, easy to spread, etc. My only complaint is I cannot make browned butter sauce with it. I also switched to olive oil mayo. I can't even taste the difference in that one.

Hummus, tabouleh, applesauce and Aleve.
Will make turkey spaghetti later on for the fellas, and fry some eggplant for myself. Might toss a little marinara on it, since I'll have it on hand.
Sardines. Dirty rice with oriental seasoning sauce.
Not exactly cooking anything but I'm contemplating hacking up a poor man's sous vide to do some amazing steaks later in the week.
