I would think that killing any animal in a violent way would cause the muscles to tighten and therefore make the meat tough, unless you're planning on electrocuting the animal afterwards.

I want to learn how to cook bok choy. I've had it a few times with other foods. Can't seem to find it around here though.

Its easy, you just have to remember that the stems and leaves can;t be cooked the same way. That;s where everyone goes wrong!
If you;re gonna stir fry it, for example...you stir fry the stems like they were celery...but you dont add the chopped leaves until everything is done cooking. The greens go in after the fire;s turned off.
