How does god separate time in days before making the sun? Also, how can he create 'the heavens' without the sun? What are 'the heavens'?

And the entire description is dedicated to earth and its nearest surroundings, like the sun. Like, what about the rest of the huge fucking universe?

If "day" is understood as a unit of time rather than as the specific rotation of the earth, there is no problem with that.  The story is being told in retrospect, not before the events, and so a unit of time designated later on can be used.  Just like someone can tell you that Caesar travelled x number of kilometers for some purpose, even though "kilometers" was not a measurement at the time that Caesar travelled.

The "heavens" are the rest of the universe not specifically mentioned in the other bits.  Thus, the stars other than the sun, the other planets, etc.

heaven is his house where everyone sings his praise. There is nothing else there, so it's bound to be a lot quicker than creating all the plants in so many varieties.
