Sometimes just ketchup, other times any combination of ketchup, mustard, onions, relish.

I didn't know mayo on a hot dog was a thing.

I make a fresh relish:

Minced red or green onion, diced cucumber peeled / seeds removed, diced dill pickle, diced pepperocini or jalapeno peppers, diced tomato. Marinate in an Italian or greek salad dressing.
God thinks it's fun to confuse primates. Larsen's God!

All your dogs sound good, except the ones with chilli. I’m not a fan of chilli on dogs.

My two favorite hotdogs are these:

Base is mayo. Then you add the dog wrapped in bacon. You can top it with diced tomatoes, red onions, guacamole, green sauce, cilantro is optional and so is that cream that you see on top.

What? I’m Mexican. What’d you expect?
